Anise And Orange Breadsticks Atkins Recipes
Ingredients:
- Soya powder- 7 ounces
- Baking powder- 1 tablespoon
- Olive oil- 6 tablespoons
- Orange zest-grated- 2 teaspoons
- Anise seeds- 2 teaspoons- divided
- Kosher or coarse salt- ¾ teaspoon
- Ground pepper-3/4 teaspoon
Directions:
The two baking sheets are lightly coated with cooking spray. The bread mix is prepared according to the package directions. This is done with the use of 5 tablespoons of olive oil and putting orange zest and crushed anise seeds (1.5 teaspoons). The dough is divided in half. Roll each of them into a rectangle of dimensions 16 by 8 inches. The dough is folded into quarters and is transferred to cookie sheet which is already prepared. If needed it should be reshaped and unfolded. It is covered with oiled plastic sheet of wrap. The same is repeated with the remaining dough. For about an hour the dough is left to rise in a warm area until it is almost two times in bulk.
With the help of pizza wheel the rectangle is cut crosswise, then it is also cut lengthwise, each strip 3/4 inch wide and of length 8 inches. Or the strips are transferred to a baking sheet and ends are pinched to the centre in the process of forming a pretzel, the ends being pressed for effect of a crimple. The strips can be twisted like straws of cheese and are placed on that sheet. It is covered with plastic wrap and let to rise in a warm place for an hour.
The oven is heated to 425 F. the remaining ½ teaspoon seeds are crushed coarsely and placed in a dish. Salt and pepper are stirred and set aside. The breadsticks are brushed with the remaining oil and sprinkled with the salt mixture. For 13 -14 minutes it is baked till it is golden and crispy. Then it is transferred to wire racks and is cooled completely.
