Directions:
The stems of artichokes are trimmed to about two inches. Four quarts of pure water is brought for the purpose of boiling in a huge pot. Three lemons are halved and the juice is squeezed into water. The halves of lemon are added and salt and coriander leaves are also added. The artichokes are placed in the liquid used for cooking and covered with the help of a heavy plate in order to keep them safe and so that they don’t spill. They are boiled for a time period of 15 minutes. This boiling continues until a knife which is inserted at a point where stem touches the bottom, comes very easily outwards. The butter is melted in a small cup in a saucepan or a microwave. The remaining juice lemons are squeezed in for juice and the juice is mixed in, added with salt and pepper. Each person is served a full artichoke that is accompanied by butter sauce and big bowl for the discarded leaves.
