Asparagus, Lima Bean and Salami Salad Atkins Recipes

Ingredients:

  • Asparagus- 2 bunches (30 bunches), steamed and trimmed (nearly2 pounds)
  • Olive oil- virgin, 2 extra table spoons
  • Chopped garlic- 1 teaspoon
  • Fresh rosemary- chopped finely- one
  • Grated lemon (fresh) zest- 1 teaspoon- 1 lemon
  • Salt ¾ teaspoon
  • Black pepper- freshly ground- ½ teaspoon
  • Lima beans (baby)(frozen)- cooked
  • Genoa salami- 2 ounces, cut as thin as match stick pieces (2/3 of a cup)

Directions:

The asparagus is cooked for a time period of 3 to five minutes in slightly salted water which is boiling. It is drained into one colander and is shocked under running cold water for a time of three minutes. The excess of water is allowed to drain, to be stacked in the bundles and cut into pieces. It is then placed in a very large bowl. In the very same bowl lemon zest, pepper, salt, oil garlic, and rosemary are added. Salami and the baby beans (Lima) are added to it and it is tossed to coat.
