Atkins coconut layer cake-Atkins recipe
Ingredients:
- Eggs – 8
- Sugar – ¾ cup
- Coconut extract – 1 table spoon
- Soya powder or soy flour – 2/3 cup
- Baking powder – 1 teaspoon
- Butter – ½ cup ( melted and cooled )
- Whites of egg – 6
- Sugar substitute – ¾ cup
- Salt – 1 teaspoon
- Butter – 1 ½ cup ( unsalted )
- Coconut – 2/3 cup ( unsweetened and shredded)
Directions to prepare:
The oven is heated to 350 Fahrenheit. 8 inch pan with parchment paper lining at the bottom is taken and greased. The electric mixer is made to run at a faster rate then beaten eggs, extracted coconuts are and ¾ cup of sugar is added and then mixed for about five minutes. Three layers of egg mixture and baking powder is prepared and it is combined, folded with a rubber spatula. Butter is also folded along with it. The prepared pan is poured with batter and bakes it for nearly 22 minutes. In the middle the cake springs when touched lightly. Cool for five minutes then the paper towel is racked and the cake layers are inverted. The parchment is peeled off and cooled completely. The bowl is kept in simmering water for frosting. Then the sugar substitute, salt, white layers of eggs are added and heated to 130 Fahrenheit. The whites are transferred to mixing bowls and beaten slowly. Place the cake on the serving dish and the coconut is mixed with one cup of frosting the cake is placed at the bottom layer and the remaining sides are filled with frosting. The left over frostings are finally patted.
