Atkins Crab Cakes Atkins Recipes
Ingredients:
o Vegetable oil, 3 table spoons, divided
o Pepper ( red bell- 1 small), finely chopped (1/2 cup)
o Finely chopped green onions-3
o Crab meat-1 pound lump- must have been picked over to avoid any shells
o Atkins- bread crumbs- fresh page link, divided
o Mayonnaise-1 cup
o Fresh parsley, chopped- 3 tablespoons
o Seasoning-old bay- ½ table spoon
o Cut lemons in wedge shape for garnishing
Directions:
One Tablespoon oil is heated over medium or high heat in a big non-stick skillet. The bell pepper and green onions are cooked until softened for three minutes. The crab is added, 2 tablespoons of bread crumbs are along with mayonnaise, and old bay and parsley are added. It should be mixed with a fork just till it combines. For 20 minutes it is covered and refrigerated. To assemble the crab cakes- The inside of a solid cup used for measuring is sprinkled with a thin layer of bread crumbs.
The measure is filled with the crab mixture and a layer of the bread crumbs is sprinkled on the top. It is packed using hands or with the help of another cup used for measuring. The crab- cake is inverted into a baking sheet which is lined with plastic wrap. The refrigeration is done for at least 1 hour or even up to a day (24 hours). In order to cook: One tablespoon oil is heated in a big non-stick skillet over medium or high heat. The four crab cakes are transferred to skillet with the use of a wide spatula of metal. Per side, it is cooked for 3-4 minutes. It is done until it becomes crisp and golden brown.
