Atkins recipe Artichokes with Three Cheeses

Items Required:
8 fresh artichokes trimmed and cut, 1 tbsp finely chopped garlic (2 to 3 large cloves), 1/2 cup chicken or vegetable broth, 3 tbsp extra-virgin olive oil, 1 tsp fresh lemon juice, 2 tbsp chopped fresh parsley, 6 large basil leaves into small pieces, 1/2 cup shredded Fontina cheese, 1/2 cup shredded Taleggio cheese, 1/2 cup freshly grated Parmesan cheese.
Artichoke is a flower rich in vitamin C, potassium, folic acid and magnesium and is fat free and very low in calories.
Fontina is an Italian cheese from cow’s milk. It has milk fat of 45% and has nutty flavor, rich, mild and fruity. It replaces Emmental, Beaufort, Taleggio and few more varieties of cheese.
Taleggio is from Italy has mild fruity flavor, strong smell and light red in color. It constitutes 48% fat. It is kept in wood shelves in caves for 6-10 weeks and cleaned every week with seawater sponge to protect from infestation.
Directions:
Preheat oven to 400F.
Place artichoke hearts in a single layer on the bottom of a baking dish. Spread garlic over artichokes. Add broth to the dish. Drizzle with olive oil and lemon juice. Sprinkle with parsley and basil. Spread the cheeses evenly one by one and ending with the Parmesan. Cover with aluminum foil and bake for 15 minutes till artichokes become tender and cheeses melt. Uncover and bake for another 25 minutes till cheeses becomes golden color and slightly crusty. Remove from oven and cool. Serve warm.
