Atkins recipe Bacon, Avocado and Jack Cheese Omelets with Fresh Salsa

Items for the Recipe:
Salsa:
- 1 small tomato, 3 green onions chopped finely, ½ jalapeno pepper seeded and chopped finely, 2 tbsp. cilantro chopped 1 tbsp fresh lime, Salt and pepper to taste.
Jalapeno pepper is from Mexico is mild and has burning sensation when eaten and available through out year.
Omelet:
4 eggs, 2 tbsp water, Salt and pepper to taste,1 tbsp butter,3 slices very thin bacon ( cooked crispy and broken into pieces), 1/2 small avocado, peeled, pitted and sliced, 1/2 cup grated Monterey Jack cheese.
The Monterey Jack Cheese is an American cheese inspired from Europe. There are two types of Monterey Jack cheese: fresh and dry Jack. The cheese melt very well and very suited for sandwiches. The dry Jack variety is aged one has sharp flavor and is used as Parmesan. When buying this cheese avoid discoloration and cracks.
Method of Preparation:
Salsa:
Add tomato, green onions, jalapeño, cilantro and lime juice in a small bowl and mix well and sprinkle salt and pepper according to taste.
Omelet:
- Take a medium sized bowl whisk eggs with water and add salt and pepper.
- In a non stick medium sized pan melt the butter and when the foam subsides, pour half of the egg mixture. When both sides of omelet are almost cooked, spread one half of the omelet with half bacon, avocado and cheese and cook for 1 minute.
- Fold other half of omelet over filling and slide omelet out onto a plate. Keep warm.
- Repeat the same procedure for the second Omelet serving and Serve with salsa.
