Atkins recipe for interesting cauliflower potato salad
If you just have close to an hour before your guests arrive and are looking to cook them a nice balanced snack cum light supper, why not try our cauliflower potato salad. With about thirty minutes to cook and thirty minutes to cool, you will have this delicious bite of a snack.
Here are the ingredients:
· Cauliflower – 1 (you’ll need to break them into small florets)
· Mayonnaise – ¼ cup
· Lemon juice – 2 tablespoons
· Sugar substitute – 2 packets
· Mustard – ½ teaspoon (dried)
· Chopped green onions – 3
· Chopped Green bell pepper – 2
· Salt, pepper as desired
Boil water with a little salt in a big pot and take the cauliflower and break them into smaller florets and put them in. Remember to add a little salt to the water before you boil it. Let this cauliflower cook for about 10 minutes in the boiling water. Now take a mixing bowl and make a mixture out of the mayonnaise, lemon juice, mustard and sugar substitute. Once the cauliflower is nice and looks soft and cooked, remove it from the water, drain all water off it and dry it by patting. There should not be any water in the vegetables, as this will then turn the salad soggy. To the mixture, add the dried cauliflower florets, finely cut pepper and green onions. To this add the salt and pepper. Leave this for about thirty minutes for the flavor and taste to set in the vegetables and this can be served after that.
