Having a tough time to get something nice done with your eggplants? Have you felt frustrated that they don’t taste good no matter what culinary skills you use? Try this recipe and you will realize what a relishing dish you can make out of the humble eggplant.
For your mint sauce you will need:
• Yoghurt – ½ cup
• Fresh, finely chopped mint – ¼ cup
• Sour cream – 1 ½ tablespoons
• Chopped green onion – ½ cup
• Finely chopped garlic - 1 teaspoon
• Salt, pepper as desired. If the pepper has been freshly ground it would taste better
And here’s what we’ll need for our egg plant:
• Medium sized Eggplants – 2 (cut these in two)
• Olive oil – ¼ cup
• Salt, pepper as desired.

Getting the mint sauce is easier, so let’s start there. Get a handy mixing bowl and mix in the mint, yoghurt, sour cream, green onion, garlic, and the salt and pepper. That is all and you are done with the mint sauce. So you will now have to put it aside till you get your eggplants ready. Preheat a high grill oven. In the meanwhile, take the cut eggplants and sauté them with olive oil, salt and pepper. By now, the oven would have heated up and you can cook the eggplants till they are soft. This should approximately take you about five minutes and you can then serve this with the mint sauce that you already made.
