Atkins recipe – Leg of Lamb with Garlic and Parsley
Another healthy factor of Atkins food is the use of garlic, usage of very less oil and no deep frying. This dish is again a healthy dish since this contains lamb and also garlic and parsley.
Method to prepare:
We need a bone piece of leg of a lamb, few cloves of garlic, some parsley, and salt for taste. The lamb has to be cooked properly and mixed well with the spice so poke holes on the lamb piece. In each hole place a garlic and parsley leaf. Rub the leg piece with salt and pepper. The taste of this dish is more if you can rub the salt and pepper the previous day of cooking and store it.
Heat the pan in oven to 475 and roast the lamb piece for 30 minutes, then reduce the temperature to 325. Again cook for 2 hours till the thermometer reading shows 130 degrees. Remove the cooked lamb from oven. Leave the cooked lamb to cool for 15 minutes. After the cooked food is cooled move it to a cutting board. Cut thin slices parallel to the lamb’s bone. The pre heating of the oven is important for coking this dish. You make natural gravy with this and use that along with this.
Add a cup of water to the same pan where we cooked the lamb after draining out the excess oil from it. Leave the pan on the stove in medium flame. You can scrap out the browned crust in the pan with a spoon. Leave this on the stove and continue stirring till the mix reduces to 3/4th cup and serve it hot.
