Atkins recipe - Middle Eastern Spice-Crusted Lamb

We shall see one such dish made with lamb. To cook lamb always remember the temperature that need to be preset in the oven, for this dish you can set the temperature to 450F.

Mix cumin, coriander, pepper, salt and cinnamon in a bowl and then rub the mixture on the outer surface of the lamb. Place the lamb in the oven and roast for at least 15minutes. Change the temperature to 350F start baking the lamb till the temperature comes down to 130F. Then leave it for 35 minutes. Move the lamb piece to a board where you can cut it. Cover the lamb piece with foil and leave it for 10 minutes. In the mean time, heat the pomegranate juice and bring it to boil and scrap the browned pieces on the pan. Remove the fat or oily layer on the upper part. You can server the piece of lamb with sauce. The lamb can also be garnished with lettuces, chives and even coriander leaves and serves it hot. If you do not like lamb to be sweet then you can avoid the pomegranate juice and eat the lamb with some good sauce.
