Blueberry scones- your favorite Atkins recipe
Ingredients:
• Soya powder – 1 ½ cup or Soya flour
• Sugar substitute – 3 table spoons ( granular )
• Salt -1 teaspoon
• Baking powder – 1 table spoon
• Cold butter – 6 table spoons ( unsalted, sliced into small pieces )
• Blueberries – 1 cup
• Fresh lemon juice – 2 teaspoons
• Cold vanilla cream – 2/3 cups ( heavier )
• Sour cream – ¼ cup ( cold )
• Egg – 1 ( large )
Direction to prepare:
Soya powder which is pulsed, substituted sugar granules and salt are added in a food processor and stirred well for nearly five seconds. The cold butter which is sliced into small pieces are combined with pulses and mixed well. This mixing is carried out for thirty seconds until the recipe turns as a meal which is coarsen. A large mixing bowl or pan is taken and the entire mixture is poured onto the larger mixer bowl. The mixture is then tossed with 2 teaspoons of lemon zest and one cup of blueberries.
In a larger liquid measuring cup or small bowl egg, cream which is heavier and sour cream are mixed. This combination is poured over the mixture which is dry and fork is used to stir the mixture well. Cool the recipe for 30 minutes. The oven is preheated to about 375 Fahrenheit. 10 equal sized dough balls are made and each one is patted into a disk bake the recipe until it’s golden at the top and golden brown at the bottom. Cool and then serve it.
