Cherry Cobbler Atkins Recipes

Ingredients:

o Soya powder- ¾ of a cup
o Biscuits
o Pecans-1/4 of a cup
o Substitute for granular sugar-2 table spoons
o Ground cinnamon-1/2 teaspoon
o Salt- ¼ teaspoon
o Unsalted butter- 3 table spoons ( cold and chopped into small bits )
o Heavy cream- 1/3 cup
o Sour cream- 2 table spoons
o Egg- 1 large
o For filling- 1.5 teaspoons starch thickener
o Fresh cherries- 2 pounds ( totally 3 cups, pitted)
o Almond extract- ¼ teaspoon
o Ground cinnamon-1/4 teaspoon
o Optional- lightly whipped, heavy cream for garnishing
o Sugar substitute- granular( see tip)- 1/3 cup

Directions:

FOR PREPARATION OF BISCUIT- The pulses are baked in a food processor and cinnamon, pecans, sugar substitute and salt are mixed till medium ground. Pulse and butter are added until a resemblance to a coarse meal is achieved. Egg, sour cream and heavy cream are placed in a liquid measuring bowl or cup. The mixture is poured into the blender and now the pulses are combined. The dough is removed and patted into the flat disk. Then it is covered with plastic wrap and chilled for an hour or two.

FOR COBBLER:

The oven is preheated to 400F. The cherries along with the sugar substitute, cinnamon and almond extract are tossed in a medium bowl. The filling is poured into a baking dish which is square or round. The dough is divided into eight pieces and is patted into disks about 3 across. The biscuits are staggered over the filling and the cobbler is baked for 40 minutes. This is done till the biscuits become brown and the fruits are tender and bubbly. It is optional to be served with fresh cream which is whipped.
