Lamb and vegetable stew – the healthy Atkins recipe
Most of us love lamb but are forced to avoid it because of the fat content and the high calorie value that scares us away from it. Here is one of our low calorie, protein rich food that will make you want more and more of this, all in a healthy way.
What you will need to make this:
- Atkins bake mix - ½ cup
- Salt – 1 teaspoon
- Pepper – ½ teaspoon
- Lamb stew meat – 2 pounds
- Olive oil – 2 tablespoons
- Crushed garlic – 2
- Dried oregano – 1 teaspoon
- Cut tomato – 1 can
- Water – ½ cup
- Red wine vinegar – 1 tablespoon
- Sugar substitute – 1 packet
- Cut green beans – 2 cups
- Cut yellow squash - 2
We’ll first have to roast the lamb and then cook it and so let’s get started with the roasting. Make a paste by adding together the bake mix, the salt and pepper. Dip the lamb in this and roast in a thick bottomed wide mouthed vessel or cook on Dutch oven.
Set aside the roasted lamb and to the remaining oil add the oregano and the garlic. Once this starts changing color, add the cooked lamb to the oven and add all other ingredients except the beans and squash. Let this cook well and the lamb should become tender and this will take about an hour and a half.
After the lamb is well cooked add the vegetables, mix the stew well. Leave the mixture to cook for about fifteen minutes when the stew is all done.
